Thanks to a cut fiber optic cable 30 miles away, we had no internet or TV connection all day yesterday. So, here we go ...
Fabulous Fast Shrimp
from Campbell's
You will need:
1 pound of shrimp*, 1 tablespoon of butter, 2 stalks of chopped celery, 1 small green bell pepper chopped, 1/4 cup sliced green onions, 1 can (10 3/4 oz.) cream of chicken soup, 1/2 cup of water, dash of cayenne pepper, paprika, and hot cooked rice.
*The recipe calls for fresh shrimp, but I am always in a hurry and use the frozen shrimp that are already peeled, deveined and cooked. If you use these, after they have thawed, be sure to lay them out on paper towels so the excess water is removed and your sauce doesn't get too watery.
To make:
Heat butter in skillet. Add celey, green pepper and green onions. Cook until tender (about 3 minutes). If you use fresh shrimp, add now and cook for an additional 5 minutes (or until done). If you use pre-cooked shrimp, you can add them with them with the soup, water and cayenne pepper. Heat through. Serve over rice and sprinkle with paprika.
Enjoy!
