Our dinner tonight stems from a wonderful neighbor who has a garden of all gardens! And beware this meal will not be for everyone. I mentioned it to someone earlier today and they said "EWW!" Tony and I, however, love love love it!
Stuffed Cabbage Rolls and Mashed Potatoes
Ingredients -
Rolls: fresh cabbage from Mr. Barker's garden (or the grocery store), 1/2 cup of cooked brown rice, 1 pound of lean ground beef, 4 cloves of garlic (minced), 1/2 teaspoon of salt and 1/2 teaspoon of pepper.
Sauce: 1 1/2 cups of tomato sauce, 2 tablespoons of honey, 2 tablespoons of brown sugar, 1 cup of chicken broth, 2 tablespoons of lemon juice.
Rolls: Carefully peel the cabbage leaves away from the core. Bring a large pot of water to boil and boil cabbage leaves for 5 minutes, drain and rinse with cool water. In a bowl, mix ground beef, rice, garlic, salt and pepper. Fill each cabbage leaf with filling and roll up, placing seam side down in a greased 13x9 baking dish.
Sauce: Whisk all ingredients in a bowl and pour over cabbage rolls in baking dish.
Cover dish tightly with foil and bake at 375 degrees for 1 hour.

Mashed Potatoes!
(And just so you know, Evan has NEVER liked mashed potatoes. Give him a beater, however, and he changed his mind!)
The sauce is good over the potatoes too.
