Dinner Day Seven.

Macadamia and Coconut Crusted Fish

Crust Ingredients:
1/3 Cup Macadamia Nuts, chopped
1/3 Cup Sweetened Coconut Flakes
1/3 Cup Panko Breadcrumbs
2 Tablespoons Brown Sugar
2 Tablespoons Butter, melted

Fish Ingredients:
4 - 5 to 6 oz white fish fillets or Salmon 
(Red Lobster uses Salmon in the recipe.  We used Crappie.)
Salt and Pepper, to taste
Nonstick Cooking Spray


Preparation:
Preheat oven to 400 degrees.  Place fish fillets in a 9x13 baking dish sprayed with nontick cooking spray.  In a bowl, combine all of the crust ingredients until well mixed.  Season the fish with salt and pepper and top each piece with an even coating of the crust mixture.  Bake on the middle oven rack for 20 minutes or until the fish flakes easily with a fork.

If you find it hard to eat fish, you must try this!  It is a little sweet and crunchy and SO good.
