Dinner Day Eight.

Brisket, Homemade Mac-N-Cheese and Quick Baked Beans

This dinner consists of Brisket that Tony smoked.  I don't have a recipe for that, BUT I do have recipes for the homemade sides we had to go with his creation.

Cheesy Ham Macaroni Ingredients:
8 ounces of elbow macaroni
6 tablespoons of butter,divided
1/4 cup all purpose flour
1/2 teaspoon of salt
dash of pepper
2 cups of milk
8 ounces of shredded sharp cheddar cheese
2 cups fully cooked ham
1/2 cup crushed Club crackers

Preparation:
Cook the macaroni according to package directions.  Meanwhile, in a large saucepan, melt 4 tablespoons butter.  Stir in flour, salt and pepper until smooth.  Gradually whisk in milk.  Bring to a boil, cook and stir for 1 minute or until thickened.  Reduce heat.  Add the cheese, cook and stir until melted.  Stir in the ham.  Drain macaroni and stir into ham mixture.

Transfer into a greased shallow 2 1/2 quart baking dish.  Sprinkle with cracker crumbs and dot with remaining butter.  Bake uncovered at 350 degrees for 25 minutes.

Minus the cracker crumbs because I didn't have any, doesn't it look yummy?  It is even better with the crumbs!

Quick Baked Beans Ingredients:
1 pound of bacon, diced
1 large onion, chopped
3 cans (28 ounces each) pork and beans, undrained
1/2 cup brown sugar
1/3 cup mustard
1 cup BBQ sauce

(These measurements make about 12 servings, so if you are just cooking for your family, cut everything in half.)

Preparation:
In a large saucepan. cook bacon and onion until bacon is crisp and onion is tender.  Drain drippings.  Add all remaining ingredients and simmer for 10 minutes.
